We are in the age of natural wines and their demand is increasing every day. People show a high concern in assuming a healthier lifestyle, appreciating local producers.

Do you know what a natural wine is?

A natural wine is made from organically or biodynamically grown grapes, without the presence of chemical substances. Grape growers committed to natural wine are against industrial methods of viticulture and winemaking. They return to the old enological practices, to the re-appropriation of knowledge, respecting nature.

The producers who embrace this philosophy carry out small productions, with manual harvesting and organic farming. In the wineries, no yeasts are added, no filtering or clarification is done, and no synthetic oenological products are used. The producers only add, when necessary, a minimum percentage of sulfite. The purpose is to maintain a rustic and natural production, revealing new aromas that are often unknown to us due to the large amount of chemical substances.

Natural wine production is above all a commitment made by men and women who choose to grow their wine with respect for the environment, in all simplicity, seeking the wine’s original flavor.

In addition, because of the particular and complex aromas provided by the use of natural yeast, wine lovers will be pleasantly surprised by this type of product. Indeed, soon after bottling, the smells and taste of a natural wine will often be comparable to those of a great aged wine.

Le Cafe de la Nouvelle Mairie

Café de la Nouvelle Mairie is, as it has been for the last 30 years, on a square near the tourist area of the Pantheon. It has the particularity of being the first natural wine bar in Paris. The Cafe de la Nouvelle Mairie continues to offer the same healthy pleasures as always: a delicious outdoor space, a simple and traditional cuisine and a natural wine list that guarantees the satisfaction of the visitor.

Willi’s Wine Bar

Willi’s Wine Bar was founded by an English man in 1980 and is located in the first arrondissement of Paris. The bar blends Parisian sophistication and British eccentricity, with bright posters on the walls and abstract designs on the ceiling, offering a relaxed atmosphere. The natural wines offered in the space harmonize well with the snacks prepared by François Yon, chef at Willi’s for three decades.

Le Repaire de Cartouche is a bar that carries with it the French originality in its slightest. The space blends the contemporary with the rustic and offers a natural and organic wine list. The chef who runs the space, Rodolphe Paquin, took care to create the wine list with celebrated winemakers such as François Ribo and Réné-Jean Dard. For the menu, Rodolphe Paquin maintains the tradition by revisiting French gastronomy dishes.
