Once through the doors, visitors are immersed in an atmosphere that perfectly combines elegance and cosiness. The interior decor exudes a modern, rustic charm, adorned with subtle details that pay homage to French and Mexican cultures. This fusion reflects Chef Indra Carrillo’s heritage and culinary journey.

The restaurant’s name, “La Condesa”, is a tribute to the chef’s Mexican roots. It also reflects her passion for blending traditional Mexican flavours with French culinary techniques, creating a unique and exciting fusion of flavours that has won the hearts of customers all over the world.

Chef Indra Carrillo

Born in Mexico City and raised in a family where food took centre stage in their hearts, Chef Carrillo’s culinary journey began at an early age. His parents, both connoisseurs of traditional Mexican cuisine, instilled in him a deep appreciation for the art of cooking and the importance of using the best ingredients.

Indra Carrillo’s path eventually led her to France, where she honed her skills in some of the country’s most prestigious culinary institutions such as: Paul Bocuse’s restaurant à Collonges, Le Meurice, L’Epicure au Bristol, Pascal Barbot’s L’Astrance.

His talent and dedication have caught the attention of the capital’s culinary critics, which has earned him several awards: the “Jeune Talent” Award 2016 and 2018 from the Gault & Millau Guide, Coup de cœur de l’année 2017 from Le Point magazine, to name but a few.

The 8-course menu with paired wines is a veritable feast for the senses, the creations a marriage of classic culinary techniques and bold, vibrant flavours. Each dish that emerges from his kitchen is a work of art that not only stimulates the palate, but also celebrates his cultural heritage and international experience.

We were delighted with the Aganelotti del Plin, served with fresh roasted corn, cumaru and a spicy aromatic broth, and the excellent lamb: marinated in black pepper leaves with horseradish and white carrots, served with an excellent thick lamb sauce.
